Apple Oat Sesame Cookies

The combination of apple, oat and sesame cookies make soft chewy cookies as apple and honey is added.

The recipe is adapted from cooksrecipe.com which I have made minor changes to suit my own preference of sweetness and in metric too.


Apple Oat Sesame Cookies:
Ingredients:( sieved )
150 g flour
150 g wholemeal flour
1/2 tsp cinnamon powder
1/2 tsp nutmeg powder ( omitted)
1 tsp baking powder
1/8 tsp bicarbonate of soda

60 g  quick cooking oat ( I used instant oatmeal )
20 g sesame seeds
70 g castor sugar 
1/4 tsp salt
2 cups chopped apples ( 1 cup approx 90 g)

60 ml honey
60 ml corn oil
60 ml beaten egg ( 1 no.)

* 1/3 cup milk ( I omitted this as I thought that apple and honey would make this cookies soft enough. It is better not to add the milk or the cookie would be too soft  and  I have also got feedback from whom ate this cookies.)

Method:
1. Mix both flour + oat + sesame seeds + sugar + cinnamon powder, baking powder, bicarbonate of soda, salt and apple.
2. + honey + vegetable oil and beaten egg. Stir until everything is combined.
3. Shape like a ball and press with palm.
4. Baking time : 25 mins until golden.
    Temperature : 190 C .

Raspberry Jam Drops


I made these jam drops from " Essential Baking " cookbook .
I need to place them on a 14" X 10 " tray twice. You can find this from "Delicious Magazine". They have almost the same recipe. ( The quantity of sugar and jam has reduced )
It is better to eat this jam drops within the day of baking.
As I kept this in the container, the moist of the jam has made these cookies very soft and you need to bake it again before eating.
** Do not stack them in the container too.


Raspberry Jam Drops
Ingredients
80 g unsalted butter ,soften
45 g icing sugar ( original recipe : 90g )
2 tbsp milk
1/2 vanilla extract
125 g self raising flour
40 g custard powder or instant vanilla pudding mix  ( I used Tesco Choice Brand , I guess it has too much yellow colouring and the taste is not what I expected )

100 g raspberry jam

Method:
1. Preheat the oven to 180 C ( 350 F)
2. Line baking tray with baking paper. ( I greased the tray with butter )
3. Cream the butter + sugar in a small bowl using electric beaters until light and creamy.
4. + milk + vanilla extract, beat until combined.
5. + sifted flour + custard powder and mix to form a soft dough.
6. Roll heap teaspoons of the mixture into balls and place on the tray.
7.Make an indentation in each ball using the end of a wooden spoon and fill with a little of the jam.
8. Baking time  : 15 mins. , middle rack.

Verdict : I love this jam drops because it is not too oily while eating. The raspberry jam has enhanced the taste of the cookies. Although I have never tried other brand of custard powder, I don't like the colour of the custard powder and the custard powder taste is too strong. I will only use 20 g of custard powder and 20 g of corn flour when I do this next time :)

Parmesan Cheese Cookies


I have got some grated parmesan cheese and wished to make some parmesan cheese cookies.
  The ratio of flour and butter I use is 2 X ( flour ): 1 X ( cold butter ). 
This is the first time I made it and those cookies turns out well.
The cookies was full of cheese aroma after baking.


Parmesan Cheese Cookies: ( To make about 35 to 40 cookies)
Ingredients :
200 g flour
100 g butter
60 g icing sugar
20 g ( 1 tbsp) milk powder
50 g grated parmesan cheese

1 egg ( separated , 30ml beaten egg white , and egg yolk + 20 ml water for egg wash)
30 ml cold water

Method :
1. Using a pastry cutter cut in the butter and flour until it resemble bread crumb.
2. Add in icing sugar , milk powder and parmesan cheese.  Stir well.
3. Pour in cold water and beaten egg white . Make the mixture into a dough.
4. Flatten the dough as thick as 1 cm and cut it with cookie mold.
5. Brush all cookies with egg wash before baking.
5. Oven temperature : 220 C.
6. Baking time : 45 mins or until golden in colour.

Tea Break - Oatmeal Cookies

I have to finish up all these oatmeal cookies that I made  by myself.
Why ? It was because too much oatmeal and too little sugar was add to this oatmeal cookies dough ( It was actually from a batch of failed cookies dough ). And they are too flaky, dry in the mouth and not sweet at all. So, kids don't them too !

Tea Break Menu :
1. 4 pcs of Oatmeal Cookies

Tea Break :Chinese New Year Cookies and Coffee

I had an excuse to take tea break after a simple noodle for lunch. 

< Menu >
1. Lunch  :  Home cooked Hor Fun Soup with braised pork , Chinese Mushroom and Chinese Cabbage 
2. Tea Break  : Chinese New Year Cookies - given by  neighbours -  Kuih Kapit ( Love Letters), Sesame Cookies, and Walnut cookies ( 核桃酥)
3. Half a mug of coffee - A mug of coffee will be too much for me at 5pm !

Some Crispy Butter Cookies and Coffee After Lunch

Making butter cookies without a cookies press but using an icing pipe which I borrowed from a friend.
At last, the icing pipe could't resist the hardness of the cookies dough, it broke !
My skill of pressing those cookies was too bad and each of the cookies won't be the same ~ !
I only brought her few pieces cookies :P


Menu :
1.Crispy Butter Cookies ( I didn't take the cookies)
2. Coffee
3. Pineapple with Sour Plum Powder ( 酸梅粉)

Crispy Butter Cookies:
Ingredients :
300 g butter
100 g icing sugar
270 g flour
70 cornflour
salt

Method:
1. Beat butter + icing sugar.
2. + flour + cornflour + salt
3. Use piping nozzle or cookies press to make these cookies.
4. Oven : 180 degree  C.
5. Time :15-20 mins.

Tea Break : Low Sugar and High Fiber Banana and Oat Biscuits

It's tea break again !
I had nothing to chew with.
Thinking of eating something "healthy" when looking at those bananas and oat. 
I would like to make some biscuits which is low sugar and high fiber.

Tea Break Menu:
1. Banana and Oat Biscuits - low sugar and high fiber.
2. 1/2 cup of black coffee ( Kopi-O ) without sugar.

Banana and Oat Biscuits :
Ingredients
2 bananas + 2 tbsp oat + 2 tbsp flour +1/2 tbsp sugar +1tsp butter + 30 ml water. 

Method:
1. Mixed all ingredients.
2. Oven temperature : 220 degree C.
3. Time : 30 mins.
