Simple Curry Sardine with Brinjal
There are two "simple" in a dish.
If cooking curry sardine only, it seems it would be "too simple" without any potatoes.
So, I added some brinjals as a side dish but I didn't have to cook the brinjal separately.
That's the other "simple" meant.
Recipe : Simple Curry Sardine and Brinjal
Ingredients:
1 chopped onion ( as big as a golf ball )
5 chopped cloves garlic
2 sprigs curry leaves
2 stalks lemongrass ( pound slightly)
4 small red chilli
1 tbsp curry powder
1 canned of sardine ( 230g)
seasoning:
salt and pepper
sugar
Method:
1. Fry chopped garlic and onion until fragrant.
2. + curry powder + curry leaves + red chilli + lemongrass+
3. + brinjal + 1/2 cup water + sardine.
4. Cook until the brinjal become soft.
5. + seasoning to suit your own taste.

2 Types of Curries in a Meal
3-Meals of the Day:
1. Breakfast : Instant noodle with minced meat and tofu.
2. Lunch : Minced with fried with ( frozen) mixed vegetable.
3. Dinner Menu :
1. Vegetarian Curry . The ingredients still Carrot , potato wedge , brinjal and tomato.
2. Stir fried four-angled beans.
3. My neighbour gave me another bowl of pig skin curry with long beans , tofu bok and brinjal.
The next thing I did was to mixed both curries together since there were 2 types of curries in a meal !
Quick and Simple Vegetarian Curry: ( For 1 person )
Ingredients:(4 " length )Slices of carrots ( so that it will turn soft quickly)
Half of a potato
(10" length) brinjal
2 tomatoes
2 chilli padi
Prepare curry paste without using a blender:( Chop an onion, 1/2 garlic, 1/2 " turmeric until very tiny )
Cooking Method :
1. Fried onion, garlic and turmeric until fragrant.
2. + potato + carrot + tomato + brinjal.
3. + 1 tablespoon of curry powder + salt + pepper.
4. + 3/4 cup of water to simmer until all vegetable become soft.

Slices of Pork Curry with Kaffir Lime Leaves
Cooking curry using those leftover ingredients in the fridge.
Those ingredients were tamarind, dried chilli , lemongrass ,ginger ,onion, garlic and the kaffir lime leaves which was quite dry as I plucked them few days ago.
The kaffir lime leaves need to be shredded before cooking in order to bring out the aroma of the leaves.
Lunch Menu :
1. Slices of Pork Curry with kaffir lime leaves.
Kaffir lime leaves adding an aromatic and astringent flavour to the pork curry and it really made me want to cook this curry again in future.
2. Fried Kangkong (water convolvulus ) with garlic.
The kangkong was also lying in the fridge for 3 days as you can see that they are yellowish in the leaves.
Easy Pork Curry Recipe:
The ingredient of curry paste for a small bowl of pork curry:
A :
1 onion
1/2 garlic
1 segment of ginger
(little finger size) turmeric
2 pc dried chilli ( you can put more - own preference )
3 stalks of lemongrass
B:
3 pcs kaffir lime leaves
2 tomatoes
100 gpork slices
2 tbsp curry powder for meat
Seasoning :
2 tbsp curry powder
salt and pepper
sugar
Method:
1. Pound A with pestle and mortar. Fried A until fragrant with medium heat to avoid burning.
2. + pork slices + tomato + kaffir lime leaves + curry powder
3. Seasoning - salt and pepper , sugar.
