Lemongrass and Tomato Chicken



What else that I could cook with the chicken I have ?
The idea of cooking Lemongrass and Tomato chicken was because I had these 3 ingredients in my fridge.
I also need something with chilli.
So , I combined those 4 ingredients and cooked with them in tomato sauce.

Lunch Menu:
1. Lemongrass and Tomato Chicken
2. Mustard Green without salt.
3. Dessert :  Cassava sweet soup which was given by my neighbour.




Lemongrass and Tomato Chicken : ( For 1 person)
Chicken few pieces

1 1/2 half of tomatoes - wedges
1 onion -  wedges
1 stalk of lemongrass - shredded
2 small chilli ( chilli padi)
1/2 tbsp chopped garlic

Seasoning:
tomato ketchup 1 tbsp
fish sauce 1 tsp
sugar 1/4 tsp 

2 tbsp oil
150 ml water

Method:
1. Stir- fried onion until fragrant with 2 tbsp oil + chopped garlic .
2. + chicken + lemongrass + tomato + small chilli.
3. Tomato ketchup + fish sauce + sugar  + water . Simmer until the chicken soft.

Chicken Teriyaki of Black Canyon Coffee, Ipoh


Lunch at Black Canyon Coffee , Ipoh.
Both of us ordered the same food : Chicken Teriyaki which came with a small plate of teriyaki sauce. It was rather salty hence the sauce was not really enhanced the chicken chop as the chicken chop was salty too. So, I had just left it there.
The Chicken Teriyaki lunch set also came with a plate of cream of mushroom soup.

Steamed Chicken with Salted Fish and Lap Cheong/ Chinese Sausage



This Steamed Chicken with Salted Fish and Lap Cheong / Chinese Sausage  (腊肠咸鱼蒸鸡) is the all time favourite dish on the dining table.
I shot this at Claire's kitchen before going out for the buffet dinner.
She told me that I bought her the cookbook as a present when she got married few years ago. Did I ? ( I 've forgotten about it  ! )

Claire's Dinner Menu:
1. Steamed Chicken with Salted Fish and Lap Cheong :
Seasoning : dark soy sauce, sugar , shao xing wine ( 绍兴酒), julienne ginger.
Garnished : spring onion and red chilli.

2. Stir Fried Broccoli and Cauliflower - I had left before the dish was done. So , I only got to shoot the raw one :) !

Vietnamese Lemongrass Chicken and It's Ingredients Needed

This is the Vietnamese Lemongrass Chicken (Ga Xao Sa ) ingredients that I prepared for my reunion dinner 2012.
There are many different version of the dish.
Some don't add in onion.
Some have no curry powder.
But I have decided to learn from  Rasamalaysia's Version.

Vietnamese Lemongrass Chicken:
Ingredients of Vietnamese lemongrass paste:
6 stalks of lemongrass ( even use the upper part of lemongrass to make thicker paste as its upper part still has the aroma of lemongrass)
1 clove of garlic
4 medium size onions
20-25 pieces dried chilli
50 ml water

1 tbsp curry powder( * not too much of curry powder or it will become chicken curry paste)
1 tbsp sugar
1 tbsp fish sauce
* no salt is needed as fish sauce is salty enough
2 extra stalks of lemongrass cut into the length of 4 cm.

Method:
1. Marinate chicken with fish sauce + 1 tbsp sugar - 2 hours before cooking.
2. Grind all the ingredients. Fried the ingredients until fragrant.
3. + 1 tbsp curry powder.
4. Fried chicken +  5 tbsp of Vietnamese lemongrass paste + 2 extra lemongrass ( 4 cm )
5. + 50 ml water to simmer until the chicken is tender for about 15 mins.
6. Garnish the lemongrass chicken with basil while serving.
