Mango Jam ( Breadmaker ) and Condensed Milk Bread with Tangzhong

Mango Jam ( Tesco Breadmaker ):

Ingredients:
800 g ripe rainbow mango ( Thailand), cut into pieces
60 -80  g castor sugar
30 ml lemon 
a pinch of salt 

Method:
1. Cut mango into piece , about 1 cm cube.
2. Place all the ingredients into the bread pan.
3. Press No. 9 function ( Jam ).
4. Let the machine finishes its whole cycle.

The original recipe is from Buffy's Baking and Booking Life 面包机: 汤种炼奶土司 , some minus changes was made.
The loaves are still very soft until the third day in the food container.


Condensed Milk Bread + 80 g tangzhong : ( 2 loaves)

1. Prepare  tangzhong  ( 50 g bread flour + 250 ml water ) - cook under low heat until it becomes thick paste. Let cool and keep in the fridge for 1 day or 2 days.


Ingredients:
80 g tangzhong 
120 ml milk 
15 g castor sugar
40 g condensed milk
3/4 tsp rock salt / salt
40 g condensed milk

250 g bread flour + 20 g extra bread flour ( some on the tables for kneading and shaping before the second proofing) but use the total 270 g bread flour if make the bread in the breadmaker) 

1 tsp yeast 
20 g butter ( Add in after 10 mins   of mixing)

1. Press No 8 ( dough) for mixing all the ingredients ( except butter).
2. Add  butter after 10 minutes later . Stop the machine manually after 20 mins of  mixing.
3. Press No 1 ( Basic) and let the dough do the kneading, resting. Stop the machine ( by switching off the electricity ) after the peeping operation finish ( about 15 mins)  and let the dough proofing in the machine for one hour. ***

I bake it in the oven :
4. Punch down the dough. Divide the dough into two  Shape it round and let rest for 15 mins.
5. Roll  the dough  flat with a rolling pin and roll it into cylinder ( using the rest of the 20 g bread flour in this stage ) and place it in the loaf pans.
6. Let the dough proofs for another 45 mins ( place a cup of boiling hot water in the oven ( not switch on  ) 
7. Preheat oven : 200 C for 10 mins.
8. Brush water on the bread dough before baking.
9. Oven temperature -  190 C ; Baking time : 30 mins. ( place the bread loaves on the lowest rack ). Bake them with lower and upper heat , simultaneously.
10. Cut the bread after half an hour later once the bread taking out of the oven.


** * If you make the bread in the breadmaker :
1. Select the crust colour -  light.
2. Select the loaf size -  1.5lb. 
3. Let the machine complete the whole cycle , stop the machine  at 0:10. ( Otherwise the crust will be too thick.

Breakfast : Dark Rye Bread Egg Sandwich

Breakfast Menu:
1. Dark Rye Bread Egg Sandwich with cheese and cucumber
2. A mug of coffee
3. Banana 




Dark Rye Bread: ( Tesco Breadmaker )

Ingredient :
200 ml water 
3/4 tsp salt ( tsp provided by breadmaker)
2 tbsp brown sugar ( tbsp provided by breadmaker)

50 g dark rye flour
250 g bread flour

3/4 tsp yeast ( tsp provided by breadmaker)

 20 butter

Method : ( Bake in the oven)
1. Press No. 8 for mixing the dough for 20 mins. Press " Stop" to stop the machine.
2. Turn to No. 1 ( basic ) + butter .  Press " Start" . ( If you bake the bread in the breadmaker , let it finish the whole cycle, take out the bread 10 mins( the LCD shown 0:10 in the breadmaker before the cycle finish..

I baked the bread in the oven. So,I did the following steps: 

3. Press " Stop " after the "Beep Beep" cycle finish and switch off the machine. Let the dough proof in the breadmaker for 1 hour.
4.. Punch down the dough and press out the air. Let dough rest for 15 mins.
5. Roll the dough flat with a roller pin. Shape the dough into a cylinder and put it the loaf pan.
6. Proof the dough for 45 mins in the oven with a cup of hot water.
7. Preheat the oven - 230 C for 10 mins.
9. Bake the bread in 200 C - 15 mins ;then 190 C - 15 mins.

***  The dough is quite wet and you need to have sprinkle some bread flour on the table and some more bread flour to pat on the dough before rolling it flat.

70 g apricot / cranberry / raisin can be added if you like it.

Tangzhong Cinnamon Red Flame Raisin Bread - Kneading in Tesco Breadmaker

Try hard to get softer bread whenever I know how to make bread.
Since using “tangzhong ” in bread will make the bread softer, I tried it and believed in it.

I also mixed the bread with red flame raisin and cinnamon powder instead of eating white bread.
One need to cook the tangzhong 1 or 2 days ahead.
Original recipe is from Carol, Taiwanese. 
I used less tangzhong because it was some leftover of tangzhong after I made a tangzhong wholemeal bread.


The tangzhong I made : ( Mix all ingredients and cook under low heat until you get a very thick mixture)
50 g of bread flour
150 ml water
100 ml milk 


Tangzhong Cinnamon Red Flame Raisin Bread: (Kneading in Tesco Breadmaker )
Ingredient A:
60 g tangzhong
50 ml milk
50 g ( 2 tbsp) sugar
3/4 tsp salt
1 large egg( about 60 g-65 g)
1 tsp cinnamon powder

1 tsp yeast 

Ingredient B:
250 g bread flour( high protein flour)

Ingredient C:
30 g butter

Ingredient D:
40g-50 g red flame raisins ( I chopped the raisin slightly )


Method :
1. Put all Ingredients A first in the bread pan.
2. + cinnamon powder  +  bread flour on top .
3. Mixing all ingredients by pressing No. 8 ( dough).
4. + yeast after 10 mins later. ( or you can put the yeast on top of bread flour in step No. 2)
The machine stops after 20 mins of mixing. Press " stop".
5. Press No. 1 +  butter  and let the machine run until the beep sound is hearing ,+ red flame raisins.
Press "stop" when the breadmaker  finishes the kneading stage. Switch off the electricity and let the dough rising in the breadmaker for 1 hour or 75 mins ( depends on the temperature of the day).
6. Punch down the dough. Take the dough out of the machine and shape it into a ball and let it rest for 15 mins.
7. Roll out the dough with a rolling pin.
8. Shape the dough and seal the seam of the dough. Let the dough have the second proofing for 45 mins.
9. Preheat oven : 230 C for 10 mins.
10 . Oven temperate( upper and lower heat - lowest rack ) : 
       200 C ( for the first 10 mins); 
       190 C ( 20 - 25 mins)

Perfect Orange Cupcakes ( Low sugar)


It is the first time for me to make cupcakes. 
But this is the second attempt to bake them without cracking on top.
( The cupcake cracked like a muffin for my first baking )
These cupcakes were very soft but I was just too lazy to give them some buttercream topping or any frosting.
I think a cupcake will look like a cupcake if it comes with frosting.

The recipe was origin from Glorious Treats and the one that I first came across was from Natasha's Kitchen , the Perfect Vanilla Cupcake Recipe.

Grated orange zest was cut tiny later.

 Perfect Orange Cupcakes ( low sugar , make 10 )
( paper cup size : diametre on top 7cm , base 4.5 cm and height  3.7 cm)

Ingredients: 
160 g self-raising flour ( I omitted baking powder and bicarbonate of soda) + 1/2 tsp salt

2 large eggs ( about 70g each)
1 tbsp orange zest ( from 1 orange, grated and cut tiny) ( I will put 1 more tbsp in future as I found that it will taste even better)
50 g sugar  ( you can increase it to 100 g if you like it sweeter)
100 ml corn oil
70 ml whipping cream + 30 ml orange juice (Let stand for 5 mins , to substitute buttermilk)

Method:
1. Beat eggs with high speed for 30 seconds and set aside.
2. + sugar , beat 30 seconds.
3. + corn oil, mixed well in low speed + whipping cream and orange mixture + orange zest.
4. + flour, mixed with a stainless steel balloon whisk to beat up all flour lumps.
5.  Pour batter into a lined muffin pan.
6.  Bake in a preheated oven : 170 C. ( I usually bake cake at 180 C with my oven. Lower temperature is used to avoid cracking.)
     Baking time : 35 mins ( or until golden in colour)

Chicken Curry with Carrot and Lady Fingers

Curry cooking always becomes an active activity for preparing my meal.
I always keep some frozen curry paste in my freezer in order to overcome the thirst of craving for curry.
Using different types of leaves for cooking curry will produce different types of aroma in the curry.
This time I use turmeric leaves and kaffir lime leaves in cooking chicken curry. The taste of this chicken curry as if the rendang ayam due to the turmeric leaves.

Chicken Curry with Carrot and Lady Fingers : ( for one person)

1 chicken drumstick( cut into pieces , skinned and removed visible fat)
5 lady fingers
1 tomato, wedges
1/2 onion
1/2 carrot, slices
3 lemongrass, smashed and cut into pieces
some chopped garlic

2 pcs turmeric leaves, sliver
3 pcs kaffir lime leaves, sliver
1 tbsp curry powder
1/2 cup of ready-made curry paste


Method :
1. Marinated chicken with  salt, curry powder + kaffir lime leaves.
2. Heat oil + garlic + onion + chicken + carrot + lemongrass + curry paste ---- stir fried + 1/2 cup water. Simmer for 10 mins.
3. + lady finger + tomato + turmeric leaves , cook until  the vegetables become soft.
4. Seasoning :  salt and sugar.

Caramel Cheese Cube Banana Cake



This is my second time baking the Banana-Caramel Cake.
I followed  exactly the recipe from Piggy's Cooking Journal for the first time. The taste of the banana cake has changed after adding caramel sauce and  beating some cream cheese into the cake.

My friends who tried the cake told me that it is better to make it a “ Banana Cake ” ,  otherwise, the cake would lose its originality as a banana cake.

So,  this gave me an idea of  making a banana cake but with  more cream cheese cube to be added in the cake, then caramel sauce as topping to the cake. Hence, I have changed the name of the cake to " Caramel Cheese Cube Banana Cake"  Voila !

The caramel  sauce has the "burnt effect" and seemed a bit bitter . 2 Tablespoons of condense milk was added to the caramel sauce. They were perfectly matched and the bitterness has gone.






Caramel Cheese Cube Banana Cake : ( using 3 eggs , 8"x 8" square pan )

1) To prepare caramel sauce:
1. 50 g castor sugar - cook in a sauce pan.
2. + 1 tbsp water + 2 tbsp liquid whipping cream after the caramel is done.
3. + 2 tbsp condense milk when the caramel completely gets cool.


Ingredients :
3  large eggs  ( about 70 g each )
70 g castor sugar  ( * I take less sugar)  or you can increase sugar to 100 g or more for a sweeter banana cake )
150 g butter
170 g flour + 1 tsp baking powder  + 1/8 tsp bicarbonate of soda - sieve together
120 g banana , mash it with a fork

100 g cream cheese , cut into cubes :  about 1/2 x 1/2 x 1/2 inch


2.) To prepare egg white foam:
  1. Beat  3 egg whites +  1/8 tsp cream of tartar. Beat 5 mins , speed 3 until a stiff peak is formed)

3.) Cake:
1. Beat butter + sugar  until fluffy + 3 egg yolk , one at a time. Speed 3, mix well.
2. Sieve in  flour (+ 1 tsp baking powder + 1/8 tsp bicarbonate of soda) . Mix well with a spoon.
3. + 1 tbsp water + 1 drop of banana essence. ( mix well before adding into the flour mixture)
4. + banana + cream cheese cubes
5. + egg white foam. Mix lightly and thoroughly.( with a spoon).Pour the mixture into a greased-paper pan.
6. Arrange slices of banana on the cake before baking.
7. Preheated Oven:  temperature - 180 C
     Baking time : 45 to 50 mins.

Chocolate Chip Muffins


I stumbled upon The English Kitchen and know that Marie makes a lot of good muffins. You may visit her blog to know what she bakes recently.
I have chosen this Chocolate Chip Muffins as my nieces like chocolate chips very much.


Some changes were made to the recipe :
1. Less sugar was used because the chocolate chips that I bought are quite sweet. 
2. Evaporated creamer was added instead of milk
3. No walnut in the muffins.




Chocolate Chip Muffins ( 10 muffins)

A . Dry ingredients: ( Stir until all well blended in a bowl )
200 g flour
50 g sugar
2 tsp baking powder
1/2 tsp salt
180 g chocolate chips

B. Wet Ingredients: ( Stir well in another  bowl )
2  large beaten eggs ( about 70 g each)
150 ml evaporated creamer / milk
100 ml melt butter or 1/2 cup melt butter
1 tsp vanilla essence


Method:
1. Pre-heat the oven to 200 C .
2..Pour B into A  -----> stir together until combine and look lumpy.
3. Spoon batter into the paper cups.
4. Baking temperature - 200 C.
     Baking time : 20 mins

Bran Bread with Apricot, Orange Peel and Walnut




Bran Bread with Apricot, Orange Peel and Walnut:

A. Starter dough: ( Mix well and leave for 10 mins)
100 g high protein flour
20 g sugar 
2 tsp instant yeast
140 ml water

B. Bread dough:
310 g high protein flour
40 g bran
2 tbsp milk powder
100 ml water ( +   extra 50 ml water if needed when kneading , those bran will absorb some water )
50 g butter
40 g sugar

C. Fruit and nut
100 g apricot , cut
80 g  candiced orange peel 
50 g walnut , chopped and  pre-baked in the oven for 10 mins, 180 C

Method:
1. Ready starter dough.
2. A  +  B. Knead dough for 20 mins.
3. Cover dough with wet towel and proof dough for 75 mins.
4. Roll out the air with a wooden roller at least twice.
5. + C. Knead well.
6. Cover dough with wet towel and proof dough for 45 mins.
7. Brush with water before baking.
7. ( Preheat oven ) Oven temperature : 180 C ; Baking time : 45- 50 mins.




Breakfast : Bran bread and tea.

Almond Cranberry Loaf



You don't need a mixer to this Almond Cranberry Loaf.
It is an easy, quick and simple recipe.


Almond Cranberry Loaf :
Ingredient A: (  Mixed well with a spoon)
250 g flour
130 g brown sugar
1 tsp baking powder
1/4 tsp bicarbonate of soda
1/8 tsp salt

Ingredient B ( mixed well with a fork ):
2 beaten eggs ( 70 g each)
50 g melted butter
80 ml milk / yogurt
1 tsp vanilla essence

Ingredient C:
80 g dried cranberry 
50 g almond , toasted and chopped

Method:
1. A + B + C. Pour into a greased paper loaf mould( 9 " X  5" )
2. Oven temperature : 180 C 
    Baking time : 75 mins

Apricot Muesli Bread

This is the second muesli bread that I made.
The bread was too hard for the first trial.

The muesli I used  was kept in the fridge and those dried fruit become drier and hard. So, I needed to add some more liquid in the dough in order to let those dried fruit to absorb some liquid so that they could be softer after baking.
If you use muesli in room temperature, less liquid ( be it milk , juice or water) is used, I guess.

I used Dorset Cereal Muesli to bake this muesli bread.




Muesli Bread:

A) Yeast dough : ( Mix well , leave for 15 mins)
100 g high protein flour
20 g brown sugar
1/2 tsp salt
2 tsp bread machine yeast ( although I didn't use bread machine)
100 ml water


B) Flour dough :
200 g high protein flour
100 g muesli ( it is drier, from the fridge)
2 tbsp (=30 g) milk powder
30 g brown sugar
60 g butter ( room temperature)
80 ml water ( 50 ml water is added for the first time, 10 ml was added each time. Control the liquid used if muesli is in room temperature)
1 tsp cinnamon powder
1 tsp nutmeg powder

100 g chopped dried apricot 

Method:
1. Dough  A + dough B---- knead for 20 mins. 
2. Proof  ( mixture 1) for one and a half hour (1 1/2 hour).
3. Roll flat the dough at least 2 times after 1 1/2 hour of proofing.
4. + chopped dried apricot. Knead for 10 mins.
5. Shape it in the bread pan. Proof for 1 hour again.
6. Brush water on top of the dough before baking.
7. Oven temperature : 180 C. 
     Baking time : 45 -50 mins.

Vegetarian Meal

  


I would like to be a vegetarian, sometimes.
I feel "lighter" through the "purification" of body by eating vegetable only.
It takes simple cooking method to complete the whole process : saute the vegetables.


Vegetarian Recipe:
A segment of aubergine
A segment of cucumber (without the seeds)
Some four-angled beans
Chinese parsley
2 small green chilli ( if you like it hot)

A pinch of salt


Method:
1. Saute aubergine and cucumber since they needs long time to be soft. Add 1/4 cup of water to simmer until the aubergine becomes soft.
2. + four-angled beans and chilli + salt +  Chinese parsley.

Chilli Tuna Spaghetti

It is an easy and simple meal : Chilli Tuna Spaghetti.
Chilli Tuna is canned food.
What I need to do it to cut a spoonful of carrot, onions and some chilli.

Chilli Tuna Spaghetti :
A canned of chilli tuna.

Chopped and Cut:
a spoonful of carrot
half an onion
half a chilli 
some garlic

Method:
1. Heat oil in frying pan.
2. Fry onion + garlic + chilli.
3. Pour the chilli tuna into the frying pan. Stir fry the mixture. 
4. + 30 ml water. Cover the chilli tuna mixture for 2 mins.
5. *  No seaoning is added as the chilli tuna is tasty enough.

Simple Curry Sardine with Brinjal



There are two "simple" in a dish.
If cooking curry sardine only, it seems it would be "too simple" without any potatoes.

So, I added some brinjals as a side dish but I didn't have to cook the brinjal separately.
That's the other "simple" meant.


Recipe :  Simple Curry Sardine and Brinjal
Ingredients:
1 chopped onion ( as big as a golf ball )
5  chopped cloves garlic
2 sprigs curry leaves
2 stalks lemongrass ( pound slightly)
4 small red chilli
1 tbsp curry powder

1 canned of sardine ( 230g)

seasoning:
salt and pepper
sugar

Method:
1. Fry chopped garlic and onion until fragrant.
2. + curry powder + curry leaves + red chilli + lemongrass+
3. + brinjal + 1/2 cup water + sardine.
4. Cook until the brinjal become soft.
5. + seasoning to suit your own taste.

Carrot ,Cucumber and Mango Pickles


This is neighbour's mango tree.
Something I can make from these mangoes is carrot, cucumber and mango pickles.
Simple ingredients but  "bon appetit". 

Ingredients:
1 carrot
1 cucumber
half of an onion , slices
1 raw mango
4 small green chilli

1/2 tsp salt 
1 tbsp sugar
1 tsp fish sauce
4 tbsp vineger

Char Siew Fried Rice

The fastest way to prepare a rice meal is to make fried rice.

Ingredients I have here are :
onion
garlic
char siew ( marinated pork)
carrot
mustard green


2 tbsp oil

Seasoning:
pinch of salt
soy sauce

Method:
1. Heat frying pan with 2 tbsp oil .
2. + onion , stir fry a while + garlic. ( garlic is easier to get burnt, so this got to be in the pan later)
3. + char siew + carrot  + water. Cover the with lid for 1 min in order to let the carrot become softer + mustard green.
4. + rice + salt and soy sauce to taste.

Curry Round Aubergines - Vegetarian Dish


Sometimes I would like to take only vegetable.
It makes me feel that my body will become "cleaner" as I only take vegetable.

These round aubergines were given by my neighbour.
So, I thought of cooking some curry aubergines.

Curry Aubergines :
2 round aubergines
1 tbsp curry powder ( I use Adabi brand )
1 tbsp cili boh ( chili paste bought from supermarket)
2 sprigs curry leaves
1/4 tsp salt

3 tbsp oil

Method:
1. Cut aubergines into pieces.
2. Heat oil in frying pan + curry powder + curry leaves . Fry curry curry to bring out the aroma. 
3. Aubergines + curry leaves + salt + 1/2 cup of water. Simmer until the aubergines become soft.

Apple Oat Sesame Cookies

The combination of apple, oat and sesame cookies make soft chewy cookies as apple and honey is added.

The recipe is adapted from cooksrecipe.com which I have made minor changes to suit my own preference of sweetness and in metric too.


Apple Oat Sesame Cookies:
Ingredients:( sieved )
150 g flour
150 g wholemeal flour
1/2 tsp cinnamon powder
1/2 tsp nutmeg powder ( omitted)
1 tsp baking powder
1/8 tsp bicarbonate of soda

60 g  quick cooking oat ( I used instant oatmeal )
20 g sesame seeds
70 g castor sugar 
1/4 tsp salt
2 cups chopped apples ( 1 cup approx 90 g)

60 ml honey
60 ml corn oil
60 ml beaten egg ( 1 no.)

* 1/3 cup milk ( I omitted this as I thought that apple and honey would make this cookies soft enough. It is better not to add the milk or the cookie would be too soft  and  I have also got feedback from whom ate this cookies.)

Method:
1. Mix both flour + oat + sesame seeds + sugar + cinnamon powder, baking powder, bicarbonate of soda, salt and apple.
2. + honey + vegetable oil and beaten egg. Stir until everything is combined.
3. Shape like a ball and press with palm.
4. Baking time : 25 mins until golden.
    Temperature : 190 C .

Chocolate Chip Banana Coffee Cake

First time for me to buy chocolate chips (bought only 200 g,  from Tesco ) and  it was stored in the fridge for a while.
It is easy to get banana at the local market here. It is surprised that I love it very much !
Take this coffee cake for breakfast or tea time with a cup of coffee would be perfect enough for the day.

 Banna Chocolate Chip Coffee Cake :( 1 loaf )
160 g butter
70 g  sugar  ( * Low sugar as banana and chocolate chip are sweet enough)

3 eggs ( 70 g each)

200 g flour  + 1 tsp baking powder + 1/8 bicarbonate of soda --- sieve all.
150 g mashed banana
100 g chocolate chip

2 tbsp milk
1/8 salt


Method :
1. Cream butter and sugar until fluffy and pale.
2. + eggs one at a time + salt +  200 g flour , stir well + mashed banana + chocolate chip.
3.  2 tbsp milk .

Oven Temperature : 180 C
Baking time : 40 mins ( + / -  depending on your oven)

Stir Fried Lean Pork with Rosemary

My neighbour had given me a small plate of petai ( bitter bean or stink bean ) with minced pork with belacan. I added aubergine as to make it a bigger portion of vegetables in order to have a balance diet.

Ingredient to be added to enhance the taste for petai :
chopped onion ( half )
belacan
a spoonful of chilli paste
1/2 tbsp fish sauce
1/4 tsp sugar

The real cooking was the "Stir Fried Lean Pork with Rosemary".
Ingredients:
150 g lean pork

A.
1 tbsp dried rosemary
1/2 tsp garlic peper ( salt free)
1/2 tsp salt
1/4 tsp sugar
1 tsp dark sauce

B. Some chopped garlic, ginger and shallot.

Method:
1. Marinate lean pork with (A) for 15 mins ( or 30 mins).
2. Fry chopped garlic, ginger and shallot until golden in colour.
3. + marinated lean pork . Stir fry for 2 mins with high heat,  + 1/4 cup of water.
4. Fry ( * without covering the wok or frying pan) until the pork become quite dry before serving.
