Minced pork with potatoes is always an easy dish to prepare.
But , I would like to have something salty and spicy.
So, preserved salted black beans ( dou chi , 豆豉）and curry leave were added in this dish in order to enhance the taste of the potatoes.
Those minced pork was prepared a day ahead.
Lunch Menu :
1. Savoury Minced Lean Pork with Potatoes- with preserved black beans and chillies
Savoury Minced Pork with Potatoes: ( for 1 person)
100 g precooked minced lean pork ( marinated with salt , soy sauce , sugar and dark sauce , steak sauce and sesame sauce)
2 potatoes , cut into small cubes (in order to shorten the cooking time )
1 tbsp preserved salted black beans ( 珠江豆豉）
4 small chillies ( depends hot spicy you like )
some curry leaves
1/2 tsp sugar
1. Fry potatoes + 2 tbsp of oil.
2. + preserved salted black beans + small chillies.
3. + minced lean pork.
4. + sugar + 3/4 cup of water to simmer until the potatoes become soft.
