This is my first attempt to bake a Pandan Butter Bundt Cake.
I started to bake this cake at 11 pm and it was done at about 12am.
Pandan Butter Bundt Cake ( 10 "Bundt Pan):
290 g butter
150 g castor sugar ( I found that it was too sweet for me and I will reduce sugar to 120g next time.)
300 g flour + 2 tsp baking powder
5 eggs ( Grade A) - separate egg yolk and white
40 ml concentrate pandan juice
To get 40 ml concentreate pandan juice :
Blended 14 pieces of pandan leaves ( screwpine leaves )with 200 ml water and let it subside for 3 days and took those concentrate juice for its colouring and flavour.
Method:
1. Beat butter + sugar until fluffy with electric mixer for 10 mins( speed 3 , Philip brand mixer)
2. + egg yolk and beat for 5 mins.
3 + egg white beat for 2 mins with speed 1.
4. + flour and baking powder , mix well with metal spoon.
5 + concentrate pandan juice as ( as picture 1) ( mix well with a metal spoon)
6. Oven temperature and timing : 190 C lower heat ( 35 mins) , the lower and upper heat 15 mins.
It would be my breakfast the next day.
And not forgetting a mug of coffee.
